- 600 g Strawberries
- 4 eggs
- 200 g Sugar
- 2 sachets vanilla sugar
- 30 cl Cream
- 24 cl Milk
PREPARATION
Separate the eggs. Beat the egg yolks with the sugar and vanilla sugar in a bowl until foamy.
Place the bowl in a hot water bath. Gradually stir the milk into the egg yolk mixture, beating until it thickens. Set the bowl aside.
Mash the strawberries, mix with the egg mixture and refrigerate.
Separately, beat the egg whites and cream until very stiff. Stir the beaten egg whites into the cooled strawberry cream, then gently fold in the whipped cream.
Pour the mousse into a glass bowl and refrigerate for 3 hours.
Now spread a "mirror" of XUXU on dessert plates and place small mousse curls on top.
