XUXU Strawberry Butter Crepes

Dreamy crêpe variation

INGREDIENTS

  • 120 g Flour
  • 2 eggs
  • 1 pinch salt
  • 50 g Vegetable fat
  • 30 g Sugar
  • 25 cl Milk
  • 500 g Strawberries
  • grated zest and juice of 1/2 lime
  • 2 Tb XUXU
  • 100 g soft butter
  • 70 g Icing Sugar
  • 20 g Vegetable fat
  • XUXU

PREPARATION

Place batter ingredients (except milk) in a tall mixing bowl. Beat with the whisks of the hand mixer and add milk. Let dough swell for about 30 minutes.

Prepare strawberries. Set aside 200 g, dice the rest, puree half of them.

Mix puree, lime zest, juice and XUXU.

Beat butter and 60 g powdered sugar until light creamy, stir in strawberry puree.

Bake ten thin crêpes one after the other in a coated pan in the hot vegetable cream.

Layer the finished crêpes on top of each other. Spread strawberry butter on one half of each crêpe, sprinkle some strawberry cubes on top. Fold crêpes into a triangle, place in an ovenproof dish.

Dust with remaining powdered sugar. Over broil in oven for 2-4 minutes, arrange with remaining quartered strawberries and add a few "squirts" of XUXU on top. Serve immediately.
