XUXU pancakes


  • 200 g flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • ¼ teaspoon salt
  • 2 eggs
  • 250 ml milk
  • 3 tablespoons oil + a little oil for frying

For the XUXU cream:
125 ml XUXU
200 g double cream
A little sugar


For the pancakes, mix dry ingredients in a bowl. Whisk the remaining ingredients together and gradually add dry ingredients to make a smooth batter. In a pan, heat a little oil. Ladle some batter into a pan (about 2–3 tablespoons) tilting the pan until the batter thinly coats the base. Cook the pancake over a medium-high heat until small holes appear on the surface, cook the other side until golden.
For the XUXU cream, whip the cream with the sugar until stiff, stir in XUXU.
Serve with the warm pancakes!
