XUXU sorbet

Ingredients serves 6

  • 650 g strawberries, fresh
  • 100 ml XUXU
  • 150 ml water
  • 100 g sugar
  • 2 tablespoons lemon juice, freshly squeezed

Method

Hull and wash strawberries, cut into pieces and blend with a hand blender. Add lemon juice and XUXU, place to one side.
Heat water and sugar over a medium heat stirring until the sugar has dissolved, remove from the heat and add strawberry puree. Pour fruit mixture into an ice cream maker for 30–40 minutes or alternatively into a metal bowl and freeze for 4–5 hours stirring every 30 minutes.
